FS user guide
Is there any current FamilySearch User Guide available in PDF (preferred spanish, but may be english)?

I'm not sure as there's ever been a user guide. I think it's all help screens accessed from within FS.
Have you searched the Help Center? Try doing a Google search and adding "site:churchofjesuschrist.org/help" to the search criteria.
